Mini cake recipes
For about 12 mini cakes you will need:
- 110ml of yoghurt
- 250g sugar
- 3 eggs
- 120g butter
- 375g flour
- 1 bag of baking powder
- pinch of salt
- Vanilla essence
First mix the yogurt, sugar and eggs together. You can use a mixer or with a ladle. The butter can melt in a microwave or a saucepan and then mixed with the other ingredients. Then add the flower, baking powder, salt and a dash of vanilla essence.
This is the batter for mini cakes! Mix it up a little and then you are ready to divide the batter.
Dividing the batter over the molds can be done with spoons but you can also use a scoop.
The molds should be filled up to about three quarters. You can put the molds in the oven but you can also put these in a so-called muffin tin so they remain in shape.
After 25 minutes at 180 degrees they are ready, provided they have a natural golden brown crust and are cooked inside.
This can be tested by pricking with a skewer into the cake. Does the skewer comes out dry? Then the cakes are done!
Before the topping is put on the mini cakes, these have to cool down first. Preferably in the oven but it also goes well when you put a baking dish over it.
For the toppings, you need:
- 100g butter
- 260g icing sugar
- Jam
- Cream cheese (e.g. Philadelphia natural)
- Ornaments
Put the butter, cream cheese and powdered sugar in a mixing bowl. Do not directly use the mixer for the powder will spurt across the kitchen.
First knead it with your (warm) hands once or twice so it becomes less watery and then you can use the mixer.
Then add (for taste) the jam. About 3 tablespoons but that depends on what kind of jam you use and what you prefer.
Mix it again and then add the topping into a pastry bag so you can make beautiful tufts. Once the tufts are put on the mini cakes, you can decorate it further, for example with a disco dip, chocolate, strawberries or anything else you like.
