The most amazing recipe for pancakes with a twist of banana and cinnamon to bring you the christmas vibes
This is my own pancake recipe that I adapted over the years, but it was inspired by an original recipe by "Sallys Welt", a german baking youtuber. This recipe creates the fluffiest and yummiest pancakes I know. It made me known as the pancake baker by my friends and they frequently request me to make this recipe. Hope you try it and enjoyyy!
INGREDIENTS
- 3 eggs
- 3 Tbs sugar
- Pinch of salt
- 150g of flour
- 3 Ts of baking soda
- 100g of milk
- 200g of marscarpone or yoghurt
- Vanilla extract
- Pinch of cinnamon
- Butter for baking
- 1 Banana
- White melted chocolate
- Blueberries
- Whipped cream
INSTRUCTIONS
Seperate the eggs. Beat the eggwhites until completely stiff and set aside. Mix the yolk with sugar, vanilla extract and cinnamon and beat until fluffy. Then combine the dry ingridients (flour, salt and baking soda) and stir into the mix. If it gets too thick, add a bit of milk. Add the marscarpone/yoghurt into the mix until combined. Then add the milk bit by bit until the mix is even.
Carefully fold in the eggwhites. Heat butter in a pan on medium heat and stack the pancakes into the pan. Bake on both sides until golden brown.
Once they are baked, drizzle white chocolate over them and top with sliced up bananas, blueberries and whipped cream. There you have your yummy Blueberry Cinnamon Pancakes.

Tip: The Pancakes also taste amazing when they're cooled already, so double the recipe to enjoy them multiple days in a row.
