Banana Cinnamon Pancakes


Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 mashed banana



  • Directions:

    1. In a medium-sized mixing bowl, whisk together the flour, baking powder, salt, and cinnamon.
    2. In a separate bowl, whisk together the milk, egg, melted butter, vanilla extract, and mashed banana.
    3. Pour the wet ingredients into the dry ingredients and mix until just combined.
    4. Heat a greased skillet or griddle over medium heat.
    5. Drop 1/4 cupfuls of batter onto the hot skillet, and cook until bubbles form on the surface and the edges are set. Flip the pancakes and cook until golden brown on the other side.
    6. Serve the pancakes warm, topped with additional sliced bananas and a drizzle of honey or maple syrup, if desired.
